Here’s to ME (and whoever is reading)

I love food, like I really love food. I consider eating a hobby as weird as that may sound. My fascination with food and the dining experience has been a part of my life for a very long time and I want to be clear that it is not something I am ashamed of or that I hide from others.

Recently, I moved away from home and started my new grown up life where I had to learn how to do many things like being independent, having real financial responsibilites, and how to cook! I never thought I would be able to do it let alone enjoy it but I soon learned that I was wrong. This past Christmas, I had more things for my kitchen on my wish list than anything else. So long went mountains of makeup and hello came expensive knives and pretty cutting boards. My infatuation was no longer just about consuming but rather creating.

This, in conjunction with the extra pounds I put on over the holidays, led me to a new point in my eating “career”. I was (and am) going to try to be healthier. Let me put it on the record that I am not on a diet. I do not like diets. The word itself screams failure to me. I know how to diet and do a GREAT job at it, however, diets never last. They always have some sort of end goal (or end dress I need to wiggle into) and after that I just want a pizza and some french fries! Just being real here people. Anyways, like I was saying, these thoughts led me to many blogs, pinterest posts, and google searches that introduced me to the idea of being a better me and putting better things into my body and in conclusion this blog was born!

I have challenged myself to eat as clean as possible for the next 60 week days (yes, that means on weekends I might go out to dinner or stop and have an ice cream cone). To be as transparent as possible and real with myself, clean eating does not always mean organic and it may not meet everyones standards but it will be a lot better than  boxed mashed potatoes and long ingredient lists. Clean eating means being more consious of labels, eating more produce, and meeting daily nutritional goals for myself and my sweet boyfriend who will also be joining me on this ride.

Throughout these weeks I will be testing out new recipes, experimenting on my own in the kitchen, packing convenient lunches, and sharing my thoughts and ideas along the way. All of this leads me to my ultimate goal which is to be healthy and happy.
